Prep Time: 15 minutes
Cook Time: 8 hours (slow cooker)
Total Time: 8 hours 15 minutes
Servings: 8 sandwiches

Ingredients:

  • 4-5 pounds boneless pork shoulder (pork butt)
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 cup BBQ sauce (plus more for serving)
  • 8 hamburger buns
  • Coleslaw (optional, for topping)

Directions:

  1. Prepare the Pork: Trim any excess fat from the pork shoulder and cut it into large chunks for easier cooking.
  2. Make the Rub: In a bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
  3. Season the Pork: Rub the spice mixture all over the pork chunks, ensuring they are evenly coated.
  4. Cook in Slow Cooker: Place the seasoned pork in the slow cooker. Pour the BBQ sauce over the pork.
  5. Set the Slow Cooker: Cover and cook on low for 8 hours, or until the pork is tender and easily shreds with a fork.
  6. Shred the Pork: Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the remaining sauce.
  7. Prepare the Buns: Toast the hamburger buns if desired.
  8. Assemble the Sandwiches: Place a generous amount of the pulled pork on the bottom half of each bun. Add additional BBQ sauce and top with coleslaw if using.
  9. Serve: Place the top half of the bun on each sandwich and serve immediately.
