Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef (or turkey)

- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (15 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) black beans, rinsed and drained

- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup beef or chicken broth

Directions
- Heat the Olive Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
- Cook the Meat: Add the ground beef (or turkey) to the pot and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Add Vegetables: Stir in the chopped onion, minced garlic, and diced bell pepper. Cook until softened, about 3-5 minutes.
- Incorporate Tomatoes and Beans: Add the diced tomatoes (with their juice), kidney beans, black beans, and beef or chicken broth to the pot. Stir well.
- Season the Chili: Add the chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine all ingredients.
- Simmer: Bring the chili to a boil, then reduce heat to low. Let it simmer for 30-45 minutes, stirring occasionally.
- Taste and Adjust: Taste the chili and adjust seasonings if needed. If you prefer a thicker chili, let it simmer longer.
